The How:
Our low alcohol natural wine was made using an ancient winemaking technique where water is put into the press with the pressed skins and those skins are re pressed to extract flavours, acids and sugars from the skins into the water. The winemaking technique is called piquette. These special pressings were then fermented in a tank. We blended in some of our natural Verdelho to give this wine a nice roundness before being bottled just before the ferment was finished. This makes the wine a true Pet Nat style
