The How:
We processed a small batch of our Shiraz naturally. It was fermented on skins then pressed just before finishing ferment. We blended in some of our natural Verdelho to add to the complexity. So you get some nice tropical flavours from the Verdelho and red berry fruit flavours from the Shiraz. This wine has no oak influence. It was bottled just before primary ferment giving the wine some bubbles and making it a true Pet Nat style
