Skin Contact Pinot Grigio Pet Nat

The How:
We processed a portion of our Pinot Grigio naturally and fermented it with skin contact. Pinot Grigio is naturally a pink grape variety. Conventionally the pink is removed from the juice to give the resulting wine a ‘white’ wine appearance. The skin contact absorbs some of the colour into the wine and also gives it some texture. The wine was bottled just before the completion of the primary ferment making this wine a true Pet Nat style
